Ash Kashk
A variety of delicious and authentic foods are cooked in different parts of Iran, one of the most delicious and famous of which is Ash Kashk. This ash is made using local or pasteurized curds.
Ingredients
- Pinto beans
- Pea
- Lentils
- Vegetables
- Garlic
- Onion
- Dry mint
- Curd
- Sufficient salt and black pepper
- Turmeric and enough oil
Instructions
The first stage
To prepare simple Ash Kashk, first, we pour peas, pinto beans and lentils separately into three bowls containing water and let them soak well.
The second stage
At this stage, we put the pinto beans together with the pea in a suitable pot, then add 8 glasses of water to the pot and put it on the heat so that the pea and the beans cook for 45 minutes on a gentle heat and become soft.
The third stage
After 45 minutes, wash the lentils and add them to the pot. Next, we chop the vegetable coarsely, then add it to the pot. After adding vegetables, we should not close the lid of the pot.
The fourth stage
Meanwhile, cut the onion into thin and even slices, then put a suitable pan on the heat and add some oil. Next, add the onion to the pan and fry well until golden.
The fifth stage
After the onion turns golden, take it out of the pan. Next, chop the garlic into thin slices and add it to the pan. Fry the garlic until it changes color, then remove it from the pan.
The sixth stage
In the end, add dry mint to the pan with a little oil and fry for just one minute. Next, add half of the hot onion, hot garlic and hot mint to the pot and mix with the ash until they are homogenous with the other ingredients.
The seventh stage
After the ash is well prepared, add curd little by little and mix. Finally, add salt and black pepper and after the ash has settled, put it in the desired dish and serve.
