Khoresh Bademjan is one of the authentic and popular Iranian dishes, which is prepared with both red meat and chicken and here we are going to teach you the recipe for Khoresh Bademjan with red meat.
To make Khoresh Bademjan, first put a pan on the heat and pour a little oil to heat it up. Finely chop the onion and pour it into the pan along with the meat and fry it, add turmeric and black pepper and fry the meat for ten minutes until it changes color and the smell of meat is gone. At this stage, add the paste and fry it for a minute until it changes color and its raw smell disappears. Next, pour about 5 to 6 glasses of water into the khoresh and let the khoresh boil, then lower the flame and let the cooked meat and the khoresh cook.
In the meantime, fry the eggplants and set them aside, and if you wish, chop two onions into slices and fry them until they are well roasted. After the meat is cooked and the khoresh water has evaporated and there are about three glasses of water left in it, add salt and lemon powder and stir the khoresh until the ingredients are mixed together. Now put the eggplants on the khoresh and pour the fried onions on the eggplants and spread them. Put the lid of the pot half open and cook the khoresh with a low flame for another 10 minutes until the eggplants are soft and take on the flavor of the khoresh.
After 10 minutes, remove the lid of the pot and cut the tomatoes into slices and arrange them on the eggplants. And close the lid of the pot again until the tomatoes soften a little, be careful not to cut the tomatoes too thin because they may be crushed by the heat. After 5 minutes, check the khoresh, if it is ready, remove it from the heat and put it in the desired dish and serve it with rice.
Tips about buying and frying eggplant
When buying, pay attention that the color of the eggplant should be black and it should not be too big. Some women use Italian eggplant to cook Khoresh Bademjan. Eggplants are large, and after peeling and removing the bitterness, cut them thinly and fry them. But ordinary eggplant is better.
How to wash eggplants?
After washing the eggplants, peel them and put them in thick salt water for an hour. Because the eggplant is light and stays on the surface of the water, put a heavy object on it so that the eggplants are immersed in salt water. Eggplant bitterness is removed in this way. Afterward, take the eggplants out and leave them to drain.
How to fry the eggplant and prevent it from becoming bitter?
Do not overheat the flame to fry the eggplant because the eggplant burns quickly and becomes bitter. Try frying eggplants with little oil. To do this, wash the eggplants and skewer them with the skin and keep them on a low heat, be careful that the heat is low because you don’t want grilled eggplants, and only when the skin has cooked a little is enough. Now remove the eggplants from the heat and peel them slowly after cooling down. Then pour a little oil into a container and fry the eggplants in it with low heat. With this method, eggplants need less oil.
Using frozen eggplant
If you want to store eggplants in the freezer, be sure to fry them first and then freeze them. In the last half hour of cooking the Khoresh Bademjan, you should put the eggplants in the Khoresh Bademjan so that it cooks slowly; But be careful, if you use frozen eggplant, it will be crushed quickly when cooking the Khoresh Bademjan.
Khoresh Bademjan with chicken
In addition to mutton and veal, Khoresh Bademjan can also be prepared with a variety of white meats such as chicken or turkey. You can add chicken to Khoresh Bademjan in two ways. The first method is similar to chicken khoresh. Fry the chicken meat pieces (chicken thigh or breast) with onions until it is fried, then continue the steps as above. The second method is to add chicken in the chopped form. Then add to the onion and after roasting continues the steps as above. If you want to prepare this khoresh with chicken, it is recommended to add at least twice as much chicken.
Khoresh Bademjan without meat
If you want to make Khoresh Bademjan completely vegetarian and make it without meat, just remove meat or chicken from the list of necessary ingredients. The method of preparing khoresh without meat does not have a significant difference, just the steps of frying the meat are removed and the khoresh is ready and served very fast.
Khoresh Bademjan with mushrooms
