Khoresh-e Fesenjoon recipe

Khoresh-e Fesenjoon is one of the delicious Iranian foods that can be prepared in various recipes.

Ingredients

  • Chicken breast and thigh
  • Ground walnuts
  • Onions
  • Pomegranate paste
  • Sugar
  • Glasses of cold water
  • Sufficient salt and black pepper
  • Cinnamon stick
  • Turmeric and enough oil

Instructions

Khoresh-e Fesenjoon recipe

The first stage

To prepare Khoresh-e Fesenjoon with chicken, first pour 2 tablespoons of oil into a small bowl, then add 1 teaspoon of salt, 1 teaspoon of turmeric, and half a teaspoon of black pepper to the bowl.

The second stage

At this stage, we combine the spices with oil, then put the chicken pieces in a tray and rub the mixture of spices and oil on the chicken meat. Next, we leave the tray aside so that the spices can be absorbed by the chicken meat.

The third stage

Now we chop the onions finely, then put a suitable pot on the heat and add some oil. Next, add the chopped onion to the pot and fry well until it becomes light and glassy.

The fourth stage

At this stage, we add some turmeric to the onion and fry until the onion and turmeric become homogenous. Next, add the ground walnut to the pot and roast for 5 minutes on a very gentle heat.

The fifth stage

The more we roast the walnuts, the darker the color will be. Of course, we must be careful when roasting walnuts, because they burn very quickly. Next, we add 2 glasses of cold water and, if desired, some small ice cubes to the pot.

The sixth stage

Cold water and ice cause a shock in the walnut kernel, and for this reason, the Khoresh-e Fesenjoon will release more oil at the end of cooking. Meanwhile, we put a suitable pan on the heat and add some liquid oil.

The seventh stage

At this stage, after the oil is hot, add the chicken pieces to the pan and fry all their parts evenly. Note that if we don’t fry the chicken pieces well, they will fall apart while cooking the Khoresh-e Fesenjoon.

The eighth stage

After we fry the chicken pieces completely, we add them to the pot along with pomegranate paste, sugar, cinnamon sticks and a glass of cold water. Now we add some cold water to the pot every 30 minutes.

The ninth stage

Khoresh-e Fesenjoon, like other traditional Iranian dishes, the longer it stays on the heat, the tastier it will be in the end. In the end, put it in the desired dish and serve it with rice.
