Instructions
The first stage: preparation of split peas
To prepare Khoresh Gheymeh, it is better to soak the split peas in a bowl of water for about 2 hours before starting to cook and change the water every 30 minutes. and pour some water on it and let it boil a bit and then drain it.
The second stage: frying meat and onion
To start cooking, finely chop the onions, then put a suitable pot on the heat and pour some oil into it. After the oil is hot, add the chopped onion to it and fry until the onion softens a little, then add some turmeric to the onion and continue frying until the turmeric and onion are homogenous. Meanwhile, after washing, grind the meat.
The third stage: adding split beans
In the next step, add the meat to the pot and after frying a little, add the soaked and boiled split peas and fry with other ingredients. At this stage, you should continue roasting the ingredients until the meat and split peas are fried.
The fourth stage: adding tomato paste
When the color of the meat changes, add the tomato paste along with some black pepper to the other ingredients and continue roasting until the tomato paste is fried. In addition to removing the raw smell of the paste, this makes the Khoresh Gheymeh have a better color at the end of cooking.
The fifth stage: cooking Khoresh Gheymeh
After roasting the tomato paste well, add a few glasses of boiling water to the pot and let the meat and split peas cook completely. At this stage, make some holes in the dried lime with a fork and pour them into a glass of water for 1 hour.
The sixth stage: preparation and addition of dried lime
This will remove the bitterness of the dried lime and not make the taste of the Khoresh Gheymeh bitter, or you can cut the dried lime in half. After the meat and split peas are fully cooked, add the dried lime to the Khoresh Gheymeh. At this stage, you can add some salt and black pepper to the Khoresh Gheymeh.
The seventh stage: preparation of Khoresh Gheymeh
Now you have to put the Khoresh Gheymeh on a very low heat so that it cooks slowly. After the Khoresh Gheymeh is almost ready, add the brewed saffron to it. At this stage, you can add a little cinnamon to the Khoresh Gheymeh. After adding saffron, taste the Khoresh Gheymeh and add some salt and black pepper if needed. In the final step, you need to prepare the potatoes. For this purpose, cut the potatoes into slices and wash them with cold water to remove the excess starch from the potatoes.
The eighth stage: Add potatoes
In the next step, rinse the potatoes and dry them with a clean towel. Put an appropriate pan on the heat and pour some oil into it. Let the oil get hot enough, then fry the potatoes in the oil. After frying the potatoes, keep them aside until the Khoresh Gheymeh is completely ready. After the Khoresh Gheymeh has been prepared well, put it in a dish and decorate it with fried potatoes. At the end serve Khoresh Gheymeh with rice.
