The second stage

After the extra water from the onion has evaporated, we add some oil and fry the onion well until it becomes light and glassy. Next, add some black pepper and turmeric and fry for another two minutes along with the onion.

Meanwhile, we wash the meat, then cut it into small pieces. Note that if we use mutton to prepare this khoresh, we must cut the pieces of meat larger, because the mutton will shrink after cooking.

At this stage, we add the chopped meat to the pot and fry for a few minutes until the color of the meat changes and it is slightly fried. It is not common to add tomato paste to this khoresh, but if we want, we can add 1 spoon of tomato paste.

The important thing about tomato paste is that if it is not fried well, it will have a negative effect on the taste and aroma of the food. For this reason, we fry the tomato paste well until it is completely fried and has a nice color.

After we fry the vegetables, we take them out of the pan, then add a little oil to the pan. Next, we remove the celery stalk, then chop the celery stalk into one to two pieces.
