Shami Kebab recipe
Shami Kebab is one of the tastiest and most nutritious Iranian foods. The main ingredients of Shami Kebab are meat, potato, onion, egg, salt, pepper and turmeric and it is typically served with bread without rice. Shami Kebab can be eaten as a main dish, appetizer or sandwich. Shami Kebab can be cooked totally vegetarian by making use of mushrooms and soybeans instead of meat so vegetarians can also eat this food.
Ingredients for shami kebab
- Potatoes
- Onions
- Ground beef
- Egg
- Salt, black pepper and red pepper
- Turmeric
- Half a teaspoon of ginger powder
- Curry spices as needed
- Oil as needed

- Tomatoes
- Tomato paste
- A teaspoon of salt and red pepper
- Verjuice
Instructions
The first stage
To prepare a delicious and special Shami Kebab, at the beginning of the work, we wash the potatoes, then peel them and grate them with a medium grater. To speed up the work, we can put potatoes in a mixer or food processor instead of grating them.
The second stage
At this stage, we grate the onion with a fine grater and remove its excess water completely by squeezing. Next, we put the grated potato and onion, together with ground beef and egg, in a suitable and spacious bowl.
The third stage
Note that we must remove the water from potatoes and onions completely because if they contain water, they will cause the shami kebab to fall apart during frying. Next, add salt, black pepper, red pepper, turmeric, ginger powder and curry spices to the bowl.
The fourth stage
Now mix and knead the ingredients in the bowl well for 10 minutes until they are completely smooth and homogenous. After the shami kebab mixture is ready, cover the bowl with cellophane and put it in the refrigerator to rest.
The fifth stage
After 1 to 2 hours, we take out the shami kebab mixture from the refrigerator, then we knead it by hand for another minute or two. Now we put a suitable pan on the heat and add 6 tablespoons of liquid oil to the pan.
The sixth stage
At this stage, after the oil is well heated, we take the size of a small tangerine from the shami kebab mixture and shape it into a round or oval shape with our hands, then we flatten it a little and put it in the oil until it is well fried.
The seventh stage
You must fry each side of the shami kebab for about 5 to 7 minutes on low heat until they are entirely cooked. After frying the shami kebabs, we go to prepare the tomato sauce. For this purpose, we peel the tomatoes.
The eighth stage
If you want to peel the tomato easily, just put it in boiling water for 3 minutes. After removing the skin of the tomatoes, put them in a food processor or blender and puree them.
The ninth stage
At this stage, pour the pureed tomato into a suitable pan and put it on a gentle heat until the water is drained. After the tomato water is drained, add 2 tablespoons of liquid oil to the pan.
The tenth stage
Now we fry the pureed tomato well until it is fried like a tomato omelet. Next, add tomato paste along with some salt, black pepper, red pepper and verjuice and mix well.
The eleventh stage
After the sauce is ready well, remove it from the heat. In the end, put the shami kebabs in a suitable dish and serve them with rice or bread. We can serve the sauce separately or pour it on the shami kebabs.
The advantages of ground beef
