Shish kebab is one of the most popular kebabs in Iran and is regarded as the most delicious food in the world by many people. This kebab is prepared from lamb or beef.

Ingredients

  • Yogurt
  • Olive oil
  • Garlic cloves, finely grated
  • Tomato paste
  • Aleppo pepper, or crushed red pepper
  • Paprika
  • Ground cumin
  • Dried oregano, crushed between your fingers
  • Black pepper
  • Lamb or beef
  • Lemon juice
  • Bread

  • Fresh vegetables, such as mint and basil (optional)

Instructions

Step 1

The ingredients including yogurt, oil, garlic, tomato paste, salt, Aleppo pepper, paprika, cumin, oregano, and black pepper must be poured into a bowl, and mixed and combined well. Add the meat and soak it in the marinade. Cover it and put it in the refrigerator for at least 2 hours and up to 24 hours.

Step 2

Take it out from the refrigerator 30 minutes before grilling. If making use of wooden skewers, put them in the water for half an hour. Either a gas grill must be heated to medium-high or a hot charcoal grill must be made ready. Take the cubes of meat out of the marinade and skewer them. Cook the meat until cooked as you like, 12 minutes to 15 minutes on a gas grill, or 10 minutes to 12 minutes on a charcoal grill. It is acceptable to char them a bit, but they should be turned regularly so they don’t burn and will have a delicious flavor. The vegetables must be skewered and grilled alongside if using.

Step 3

Put the bread on a serving dish, put the kebabs on the bread, pour a little lemon juice over the kebabs, pour a little olive oil slowly and eat with fresh vegetables and rice.

  1. If you don’t have a charcoal grill, you can cook the kebabs in a double-sided pan or in the oven.
  2. It should be noted that if the heat is not even while cooking, one part of the kebabs may be burnt and the other part may not cook well.

  4. According to your taste, you can use mutton instead of beef.
