Ingredients

  • Onion
  • Carrot
  • Zucchini
  • Peeled Barley
  • Enough meat or chicken broth
  • Enough parsley
  • Tomato paste 1 tablespoon
  • Enough salt, black pepper, turmeric and paprika
  • Sufficient amount of fresh lemon juice
  • Sufficient amount of soup noodles (optional).

Instructions

The first stage

To prepare vegetable soup, we first wash the barley, then put it in a bowl containing water and let the barley stay in the water until it is soaked. Next, we wash the carrot, then remove its skin.

The second stage

Now we grate the carrot with a fine grater. Next, we wash the zucchini, then grate it coarsely like carrots. Afterward, we peel the onion, then wash it and chop it into small pieces.

The third stage

At this stage, we put a suitable pot on low heat, then pour some liquid oil into it and immediately add the onion. Next, fry the onion a little, then add salt, black pepper, turmeric and paprika to the onion.

The sixth stage

Now we let the extra juice of the parsley come out, then we put the parsley on the meat board and chop it finely and add it to the soup. Next, we add pasta or soup noodles to the pot.

The seventh stage

At this stage, we add tomato paste to the soup along with fresh lemon juice, then mix until the color of the tomato paste in the soup spreads. Next, let the soup boil for 5 to 10 minutes until it reaches desired consistency.

The eighth stage

Finally, after this time, we take the pot off the heat, then pour the soup into the desired container. Finally, garnish the soup with some chopped parsley, then serve.
