Tahchin
Tahchin is one of the popular Iranian dishes, which is also known as special food for important occasions.
The necessary ingredients for preparing Tahchin
- Chicken breast
- Rice
- Onion

Instructions
The first stage
At the beginning of the process, to prepare the Tahchin, pour the chicken breast with 2 glasses of water and some salt and turmeric into a suitable pot, then put it on high heat until the water in the pot starts to boil.
The second stage
Next, lower the heat under the pot and let the chicken meat cook for about 30 to 40 minutes until it becomes soft. When the chicken breast is cooked, take it out of the pot and cut it finely or cut it into small pieces.
The third stage
Peel the onion and chop it finely. Choose a pan and put it on the heat and pour a little oil into it until it gets hot. Add the onions and fry until light and golden. Add the chopped chicken to it and roast it.
The fourth stage
We cut the carrot into small slices, then cut the bell pepper finely and add it to the pan and fry it until it becomes soft and cooked. Add salt, pepper and spices to it and fry.
The fifth stage
At the end, we add brewed saffron and barberry. After roasting the ingredients for another one to two minutes, turn off the heat under the pan and set aside. We soak the rice in advance with a little water and salt. We put a pot of water on the heat until it boils.
The sixth stage
Then add the rice with a little salt and let it cook. When it is half cooked, drain it. In a bowl, add the egg yolk and full-fat yogurt and brewed saffron and mix well.
The seventh stage
Pour half of the rice into it and mix. At this stage, put a suitable pot with a little liquid oil on the heat until the oil is hot. Then pour the saffron rice into the bottom of the pot. Then we pour the mixture of chicken and vegetables on it.
The eights stage
Pour the last layer of rice and smooth it well and put it on low heat. Put a lid on the pot and wait until the tahchin is cooked and golden.

Try to consider the diameter of the Tahchin between 5 and 7 cm so that the Tahchin is both crispy and cooked.
